There are a few milestones when it comes to a 21 day Daniel Fast.
For me, they are day 1, day 3, day 7, day 10, day 14, and day 21.
This is my fast in a nutshell thus far...
Day Before...I am so excited! I'm going to feel great! I can't wait.
Day 1...What can I eat? There is nothing to eat. It's 2:00pm & I'm on my 4th banana. I
Day 2... I'm starving. That Hershey's bar looks amazing.
Day 3...I can do this. Time to make some good food.
Enter coconut corn chowder.
After a coworker brought in a creamy, buttery, bacony corn chowder that smelled eye watering good...I was on a mission. I ended up making a Daniel Fast friendly corn chowder that was oh-so-yummy. Don't believe me? I gave some to my T-bone & Heinz 57 loving step-dad, and he agreed -- D-double O-DELICIOUS. Thank me later, friends.
Coconut Corn Chowder
Ingredients:
2 T Olive oil1 medium white or yellow onion chopped
2-3 stalks celery chopped
1 green or red bell pepper chopped
2-3 carrots, peeled & chopped
3 cups frozen corn (organic to avoid genetically modified)
~3 cups quartered potatoes (my favorite are the small golden ones, naturally buttery & delicious)
3 cups vegetable broth (ensure no sugar added for Daniel Fast friendly)
1/2-3/4 can coconut milk (the real stuff)
1/2 t thyme
1 t kosher or sea salt
1/2 t black pepper
1/2 t paprika
1 t lime juice
cayenne pepper and cilantro for garnish
Preparation:
1. Saute onion, celery, pepper, & carrots in olive oil until onion translucent (approx 10 minutes).2. Add corn, potatoes, vegetable broth, and spices to pot. Bring to a boil.
3. Reduce to a simmer. Simmer for 15-20 minutes or until potatoes are tender.
4. Add coconut milk & lime juice, simmer for 5-10 more minutes.
5. Puree about 1/2 soup with an immersion blender (if you don't have one, get one) in the pot.
6. Simmer for how ever long your heart desires. Or go ahead and dig in.
7. Garnish with a little cilantro. Sprinkle on cayenne pepper to taste (this step is a must for me).
8. Enjoy!!!
